Eggless Carrot Banana Spice Cake

Full of goodness Spice Cake (eggless)

Preparation time: 30minutes (during which your oven will get preheated)

Cooking time: 65 minutes

Makes around 12 pieces of cake

Health quotient: Goodness of almond flour, apple, bananas and walnuts


Dry Ingredients:

  1. Sugar                                                 1/4 cup
    (you can take 1/3 cup if you like it sweeter)
  2. Whole wheat flour (regular atta) 1+1/4 cup
  3. Almond flour                                    3/4 cup
  4. Baking powder                                 1 teaspoon
  5. Baking soda                                       1 teaspoon
  6. Garam masala powder                    1 teaspoon
  7. Nutmeg powder                                1 pinch
  8. Cardommom powder                      1 pinch
  9. Cinnamon powder                           1 pinch

Wet Ingredients:

  1. Apple sauce                                        1/4 cup (replacement for oil and butter)
  2. Mashed Bananas (ripe bananas)    2
  3. Milk 1/2 cup

Fruit and Nut

  1. Walnuts (chopped)                         1/3 cup
  2. Carrots (grated)                                1 cup


  1. Preheat the oven for 30 minutes at 175 degree celsius
  2. Take a large bowl and whisk all the dry ingredients together
  3. In a separate bowl, mix the wet ingredients
  4. Add the wet ingredients mixture to the dry ingredients and mix well
  5. Fold in the grated carrots
  6. Dust the walnuts with flour before folding them in the batter
  7. Grease the cake pan and bake for 65minutes till the knife comes out clean
    when using almond flour I bake with both top and bottom heat for the first 50minutes and for the last 10-15 minutes just bake with the bottom heat.
  8. Let the cake cool in the dish for 20minutes before demoulding


  1. Apple sauce replaces the oil or butter.
  2. Due to bananas and almond flour the cake may become a little moist if kept completely covered or in a sealed container. It will be better to let it air to keep it from getting too moist.
