IMG_1329Preparation time: 30minutes (during which your oven will get preheated)

Cooking time: 25 – 30 minutes

Makes 12 muffins (1 muffin tray)

Health quotient:Extremely Healthy!!
With Goodness of apple, bananas and dates

  1. Apple sauce 1/3 cup
  2. 1 egg
  3. Mashed Bananas 2
(take over ripe bananas, the ones no one wants to touch and which eventually make way to the trash can)
  4. Date paste 1 cup
(I use pre-made date paste. I just mix it with 2 teaspoons of hot water so that it has a paste consistency. You can otherwise just de-seed the regular dates, soak them in warm water for about 2 hours and then blend it. You will get the same results
  5. Whole wheat flour (regular atta) 1+1/6 cup
  6. Baking powder 1/3 teaspoon
  7. Baking soda 2/3 teaspoon

  1. Preheat the oven for 30 minutes at 175 degree celsius
  2. Take a large bowl and whisk egg and apple sauce together
  3. To this add thoroughly mashed bananas and date paste and whisk together
  4. To this add the whole wheat flour, baking powder and baking soda and mix it well
  5. If it is not muffin consistency, please add more flour
(depending on how thick is your date paste and apple sauce, the consistency may vary)
  6. Line the muffin tray with liners and pour the batter till 2/3 of the liner
  7. Bake till the knife comes out clean

  1. Apple sauce and egg replace the oil or butter. Replacement used in this case is 1/3 cup to 1/3 cup.
  2. Date paste is used instead of sugar. A typical replacement is 1 cup for 1 cup
  3. It is a bit on the sweeter side since bananas, dates and apple are all sweet fruits. You can vary the date paste quantity to adjust for sweetness
  4. Walnuts and pecans would be great addition to this but since I give these muffins to my children in school, it had to be nut-free
